Wow I haven't posted??

Been awhile since I've posted??

Was down with girly troubles, have 2 fibroids that I need to do something?? Got a number for a new Gyno,need to call & make an appt. trying to wait till my new insurance kicks in!
Ugggghhhh wish I could wave a magic wand & all would be good!!

Than I heard this my brother put my parents dog down:( Mom gave her to him when Papa was so sick. They don't have a fenced yard & Mom was afraid to take her for a walk at night in case she fell or something. We are both about 45 minutes away. He didn't even let us tell her good-bye:( I'm sooo sad:( He said she snapped at him & Skylar & she was having a hard time with the stairs. Broke my heart!!

As for today Coffee's ready !! DH finally has a day off!! Yippiee, so no clue as what we are doing?? I've been cleaning up the foyer & kitchen. Just put some clothes in the washer & have to empty the dryer & dishwasher. Did all that than DH said let's out for breakfast wahoo no cooking!! Than hit Walmart! LOL I have a panic attack when I go there after 7 in the morning!! LOL stress's me to the max!! So today it was fun, I pretended to push people's head's into the cooler, that were blocking the aisle's or what-ever!! LOL DH was impressed I was laughing thru the aisle's!! He busted out laughing when I told him how I was coping with it!! Told me I was crazy!! LOL I said but you already knew that!!

All day I've been cleaning & doing crazy piddle stuff! LOL Took Harley to get her nails clipped at Petsmart, she clawed me on both arms! Ouch!! Found a recipe for a cake to make for Susan's birthday, she'll be the big 50 on Thursday! She love Snickerdoodle cookies, so I found a cake recipe to try!! Oven-Cooked Rice

Oven-Cooked Rice
1 cup long-grain rice, uncooked
2 cups canned chicken broth (I use low-sodium/low-fat)
1 can sliced mushrooms, drained
1 tsp. dried parsley flakes
1/2 cup chopped onion (optional)
Salt & pepper to taste
Any other dried herb you want to put in with or instead of the parsley (I sometimes use chervil or tarragon)

Mix all those together & put in a lightly-greased 1 and 1/2 quart oven-proof casserole. Cover and bake at 350 for about 55 minutes, or until all the water is absorbed. If your casserole lid doesn't fit tightly, cover the dish first with aluminum foil & then put the lid on. Fluff up with a fork before serving & to stir everything in. Makes 4-6 servings. Cooks along with any other meats at 350, making things very easy. I usually check this at the end of the cooking time by separating the rice a bit with a fork. If all the liquid isn't absorbed, it goes back in the oven for another 5-8 minutes, or until done

Productive Day!

I've been a cleaning fool!! Harley & Tango kitty both got baths & flea treatments. Vacuumed up the living room , sewing room & my truck. Decided not to go to movies a thunderstorm came rolling in, so I put a movie on HBO & watched it thru my eyelids!! LOL Than I moved my computer desk ekkkkkkkkkkk dust bunnies were living back there!!! Cleaned that all up, than used cable ties & cleaned up my wires. LOL Not looking like a fire hazard now!!! I even hung up the outlet strip!! Oh & I ordered a battery for my cell phone figured I try that to see if would work. Was 3.44 so way cheaper than getting a new one plus contract!! Had leftover cheeseburger pie for dinner, still was yummy!!

Cheeseburger Pie Recipe
2 pie crusts (15 oz refrigerator pie crusts or deep dish frozen)
1 ½ pound lean ground beef (80/20 or higher on the lean number – the 20 is the amount of fat)
1 small onion (chopped fine)
¾ cup ketchup
1 chopped dill pickle (or a TBS of relish)
1/8 tsp pepper 1 cup shredded cheese (sharp cheddar is the best) Directions: If using prepared pie crusts (making this dish very easy), bring the pie shells to room temperature. This takes about 20 minutes for refrigerator crusts. With frozen, it helps to put them in the refrigerator the night before and then it takes about the same time or a little longer depending on how cold you keep your refrigerator. While the pie crust is warming up, brown the hamburger in a good sized skillet. Stir and break the meat into small crumbles. Drain off the extra fat. Add the onion to the browned meat and cook until the onions are soft. When the onion is chopped fine, this does not take long. The onions will be soft and look kind of clear when cooked. Add the pickle pieces, ketchup and pepper to the meat mixture, and cook for a couple of more minutes. Stir to get the flavors mixed together. Place one 9 inch pie crust in a pie dish and shape to fit with a little overhang on the edges. Pour the meat mixture into the pie shell. Sprinkle cheese around on top of the meat mixture evenly. Top off with the second pie shell and flute the edges. In other words, just pinch the overhang together with your fingers to seal and make the edge look like a pie crust edge. This is easier said than done. It still tastes great even if you aren’t great at making pretty flute edges. Use a knife to put some air holes in the top crust. Do not cut down into the bottom crust. You’re just creating air vents so the steam can escape as the pie cooks. Bake at 450 degrees F for around 15 to 20 minutes.

I used the premade crusts but made 2 pies instead of putting the crust on top!!!

The Boys are working today, I went to the Waffle house with them early.
Came home & did a flea pre treatment on all the carpets, gave the puppy a bath & waiting on her to dry some to do her Frontline treatment. Have laundry going to! I want to vacume my truck out before it rains. Then am thinking about going to the movies by myself, I want to see Sex & the city because I know DH will not go see it to much of a chick flick!!
Guess I will if I get all my chores done!

Saturday's Adventure!

I stopped at the thrift store & filled a bag for 7 bucks!! LOL the lady told me I would never fit that all in a bag!? I did it!! I got 4 stainless steel serving spoons, the kind with the long handles, a purple dress & matching jacket, 8 placemats, 1 twin flat sheet, 1 full sheet set, cute bunny salt shaker & 2 quilted pillow shams. Guess she thought I was just gonna cram it all in there, I rolled it all up & still had a bit of room, she was impressed!!! Than to top all that off! LOL DH calls ,the kid he's has working today stays at the company house. The supervisor tells him since he's not working for the company this weekend he can't stay at the house??? I'm like what the heck!! Supervisor is not working this weekend either?? I'm so mad, that's so totally wrong!! The kid is 20 will be 21 next week, he's has no car here, came down on the van. He lives about 1 1/2 hrs. from here. Anyway he's staying here tonight, I made cheeseburger pies & a pot of green beans for dinner. I have to get in the guest room & move those boxes of cards around. Going to put fresh clean sheets on the bed too!!

LOL I'm a mess!!

Hi y'all
LOL I'm still swinging off the moon!! I tell ya me & sugar do not play well together!! I left work at 3 took all the trash to the dumpster, than went & picked up one of the tech's work bags that he left on the job, stopped at Big Lots. They had lap top cooling trays for 13 bucks! Stopped by the old salon, dropped off papers I printed for one of the girls. Saw my biker friend Joker LOL he's a mess!! Then went to where my brother works at Mediac to show him the samples of block letters my sewing machine will do, he wants his name on his work shirts. Got home & started more laundry, took lasagna out of the freezer for dinner, changed & waited on my 5 for color! Cleaned up all that than keep right on sweeping down the hallway, bedrooms, bathrooms, changed again, heated dinner up. Swaped laundry around, folded up some & put away!! I hope I can sleep tonight!! LOL it's almost 10:15 & still going strong!!

Cheesy Beef Casserole

From Gooseberry Patch
Cheesy Beef Casserole
1/2 lb. ground beef
1/4 c. onion, chopped
1/4 c. celery, chopped
1 t. salt
1/8 t. pepper
4 c. bread, cubed
3 T. butter, melted
2 eggs, beaten
1 c. milk
1 c. shredded sharp Cheddar cheese
Brown ground beef, onion, celery, salt and pepper together; drain. Combine with remaining ingredients; spread in a greased 2-quart casserole dish. Bake at 350 degrees for 35 minutes; let stand 5 minutes before serving. Serves 4.

Losing my mind!!

Good morning I'm losing my mind??? LOL I thought I posted yesterday?? Been working crazy!! Yesterday was my Mom's birthday she turned 73, she came into town. Had lunch with my brother, his wife & Skylar. She took Skylar home with her. My brother is working all this week. She loves my Lantana so I'm going to buy her some for her birthday!! Just find the time to go get it!! Hopefully I'll go up there Sunday!
Working 9 to 3 today! We broke a record yesterday with 101!! Uggggg it's hot, breath sucking & sticky!!

Taste test is done!!

OK here's the 2 recipes I used today for the ham all comments were on the recipe from Allrecipes
Tangy Slow Cooker Pork Roast

"This recipe is a favorite with my husband. I usually serve it with buttered egg noodles and sugar snap peas."
INGREDIENTS:1 large onion, sliced
2 1/2 pounds boneless pork loin roast
1 cup hot water
1/4 cup white sugar
3 tablespoons red wine vinegar
2 tablespoons soy sauce
1 tablespoon ketchup
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon garlic powder
1 dash hot pepper sauce, or to taste
DIRECTIONS:1. Arrange onion slices evenly over the bottom of the slow cooker, and then place the roast on top of the onion.
In a bowl, mix together water, sugar, vinegar, soy sauce, ketchup, black pepper, salt, garlic powder, and hot sauce; pour over roast.
2. Cover, and cook on Low for 6 to 8 hours, or on High for 3 to 4 hours

For the pork loin again all comments were on the recipe
On this one I did not use the red wine, didn't have any!

"A simple pork tenderloin recipe for the slow cooker with flavors of a fancy feast! The roast soaks up the wonderful flavor combination of onion, red wine and garlic, all of which come together at service to make a delicious au jus.
"INGREDIENTS:
1 (2 pound) pork tenderloin
1 (1 ounce) envelope dry onion soup mix
1 cup water
3/4 cup red wine
3 tablespoons minced garlic
3 tablespoons soy sauce
freshly ground black pepper to taste
Edited to add: I added 1/2 cup brown sugar in place of the wine
DIRECTIONS:
1. Place pork tenderloin in a slow cooker with the contents of the soup packet. Pour water, wine, and soy sauce over the top, turning the pork to coat.
Carefully spread garlic over the pork, leaving as much on top of the roast during cooking as possible.
Sprinkle with pepper, cover, and cook on low setting for 4 hours.
Serve with cooking liquid on the side as au jus.

Both recipes were excellent!!! I liked the sauce on the second one best!!

Yippiee a day off!!

I had a busy day yesterday!! Was fairly busy at the salon, than hit Food Lion. They had fresh hams on sale & pork loins too!! So I got one of each. Cut the loin in half & froze one. Have it in the crock pot with some brown sugar, soy sauce, garlic & onion soup mix. I have the ham in the other crock pot with white sugar, onions, red wine vinegar, soy sauce, ketchup, garlic, salt & pepper plus a splash of hot sauce.We went last nite to this little ice cream looking place called Sahara they have the best sandwiches!! I had a Souvlaki Sandwich mine was made with beef tips!! Ymmmm(Souvlaki wrapped in pita bread with tomatoes and onions, served with french fries and tzatziki sauce.)DH is not so adventurous & had a turkey club!! LOL And a blueberry shake. We sat out under the pergola to eat & boy was it hot!! So we are eating & DH's cell goes off it's his supervisor, he's here from WV & doesnt really know where to go or anybody! He invites us over for a beer & chat. OK it's right around the corner from where we are. Get there & he's had a few LOL & showing us the house the company rented for them. There's no furniture in the front room no kitchen table, go to the living room & there's a couch & a couple of lazy boys, TV is on but no sound. I look at quick like ya know check it all out!! LOL he has a porn movie playing??? I'm like what the heck??? Needless to say we didn't stay long LOL I busted him too cause you know I had to say something!! He was so embarrassed he said forgot is was on YEAH RIGHT!! Ewwwwwwwwwwwww

Off to play outside before it gets too steamy hot!!

Sante Fe Soup
2 pounds ground beef
1 large onion
1 can kidney beans
1 can black beans
1 can pinto beans
1 large can chopped tomatoes
2 cans shoe peg corn
1 can Ro-tel tomatoes
2 envelopes taco seasoning
2 envelopes Ranch dressing dry mix
Brown meat with onion and drain off fat.
Add all ingredients.
Bring to boil.
Reduce heat and simmer 2 hours.

Italian Knot's

2 1/4 cups of sugar
1 cup of melted butter
1 dozen large eggs
1 bottle Anise flavoring
8 cups or more of flour
1 jar of round candy sprinkles
Make a well with the flour, add above ingredients, mix & knead to handling constiency. Take a small piece & make like a pencil. Tie in a knot. Bake 15 to 20 min. Till golden brown. 375 oven Make icing with confectioners sugar & milk. Dip top halve of knot in icing. Sprinkle with candy sprinkles while still damp

Butter Horns

2 cups flour
1/2 lb butter
1 cup sour cream
1 egg yolk
Mix together and than separate into 10 pieces. Wrap individually in wax paper and refrigerate over-night. Make a mixture if cinnamon, sugar and chopped nuts. Flour board and roll out one piece of dough into a circle. Divide with a knife into 8 pie shaped pieces and sprinkle with the sugar mixture mixture. Roll from outside toward middle. Repeat with all dough. Place on cookie sheets bending slightly to form the horn. Bake in 375 oven for 15-20 minutes. Use an ungreased cookie sheet.

Corn Bread

1 1/2 cups Goya Yellow corn meal
3/4 cup flour
2/3 cup sugar (used 1/2 cup)
1 Tbs. baking power
1 tsp. salt 1 cup buttermilk ( used 2%)
1 large egg
3 Tbs. butter
Preheat oven to to 400 degrees Grease baking pan (used cast iron frying pan) Stir together corn meal, flour, sugar, baking powder & salt Whisk buttermilk, egg & butter together than add to dry ingredents until just mixed. ( just dumped it all together) Bake for 20 minutes or until toothpick comes out clean.

Angel Biscuits

This is the only recipe I can do LOL all the others come out like hockeypucks!!
Angel biscuits
1 pkg. yeast
5 cups flour
1 cup shortening
2 cups buttermilk
1 tsp. Salt
3 tsp. Baking powder
1 tsp. Soda
3 tsp. Sugar
Dissolve yeast in 1/3 cup warm water. Mix rest of dry ingredients and cut in shortening. Add yeast mixture and buttermilk. Mix well. Roll out and cut. (I use a glass) Place on cookie sheet and let rise for about 30 minutes. Bake at 425º for 10-12 minutes. Dough can be refrigerated for up to three days. If using cold dough, let rise a little longer.
Tips: do not over knead makes them tough. Do not twist the glass or cutter it seals the edges & will not let them rise.

Night Night Cinnamon Buns

20 Frozen Dough Rolls
1 cup Brown Sugar
1/4 cup Vanilla Instant Pudding
1 tablespoon Cinnamon (up to 2 Tbsp)
1/4 cup Raisins, (Plumped)
1/4 cup Butter, Melted (up to 1/2 C)
Before you put the cat out and turn off the lights, grease a 10" Bundt Pan and add the frozen rolls. Mix the brown sugar, dry pudding powder and cinnamon. Sprinkle over the rolls. Sprinkle the plumped raisins on top. Pour the melted butter or margarine over all. Cover with a clean,damp cloth. (Leave out at room temperature). Turn out the lights and say Good Night. In the morning preheat the oven to 350F and bake for 25 minutes. Let sit for 5 minutes and then turn out on a serving plate. Now Enjoy!

Green Beans Caesar!

Green Beans Caesar!
1/2 lb fresh green beans (or frozen)
2 tablespoons salad oil
1 tablespoon vinegar
1 tablespoon instant minced onion
1/4 teaspoon salt
1 clove garlic, crushed
1/8 teaspoon pepper
2 tablespoons dry breadcrumbs
2 tablespoons grated parmesan cheese
1 tablespoon melted butter
Prepare and cook green beans until tender (10-15 mins) If using frozen, follow cooking directions. Toss green beans with all ingredients except bread crumbs, cheese and butter. Put in 1 1/2 qt ungreased casserole dish. Mix bread crumbs, butter and cheese. Sprinkle over green bean mixture. Sprinkle with paprika. Bake uncovered at 350 degrees for 15-20 minutes or until heated through

Roasted Potato Thins

From Southern Living
This recipe goes with Apricot Chicken
1 large unpeeled baking potato
Vegetable cooking spray
1/4 teaspoon salt
Cut potato into thin slices, arrange on an aluminum foil-lined baking pan coated with cooking spray. Lightly coat slices with cooking spray. Sprinkle with salt. Bake at 400° for 30 minutes or until golden brown. Yield: Makes 4 servings

Apricot Chicken

From Southern living

4 skinned and boned chicken breast halves
1/4 teaspoon salt
1 (16-ounce) can apricot halves, undrained
1/2 cup orange juice
2 tablespoons lite soy sauce
1 garlic clove, minced
1 teaspoon dark sesame oil
3/4 cup all-purpose flour
1/4 to 1/2 teaspoon ground red pepper
2 teaspoons vegetable oil 6 green onions, thinly sliced
1/4 cup chopped fresh cilantro
Place chicken between 2 sheets of plastic wrap. Flatten to 1/2-inch thickness, using a meat mallet or rolling pin. Sprinkle with salt. Drain apricots, reserving liquid. Coarsely chop apricots. Stir together reserved liquid, apricots, juice, and next 3 ingredients. Combine flour and pepper; dredge chicken in flour mixture. Cook chicken in hot vegetable oil in a large skillet over medium-high heat 3 minutes on each side. Reduce heat to medium; stir in apricot mixture. Cook 3 to 5 minutes. Add onions, and cook 1 minute. Sprinkle with cilantro. Serve with Roasted Potato Thins. Yield: Makes 4 servings

Beer Baised Pork Chops

I got this recipe from a fellow Rose Dori
We love it! I've also used Pepsi instead of beer. For the non drinkers.
4 boneless chops 1/4" thick (or bone in)
2 Tbsp. Flour
1/2 Tbsp. Butter
1/2 Tbsp. Olive oil
1/2 C. chopped green onions (or regular)
2 garlic cloves, pressed (or minced)
8 oz. Mushrooms, sliced (fresh or canned)
1/2 tsp. Thyme
8 oz. Beer, room temp.
Salt and Pepper to taste
Flour chops. Melt butter and oil together in a skillet over med. high heat. Brown chops quickly on both sides. Remove and keep warm. Add onion, garlic, mushrooms, and thyme and saute an additional min. Return chops to skillet, add beer and bring to a boil. Reduce heat, cover and simmer 7 to 8 mins. Season with salt and pepper

Sweet and Sour Kielbasa

Sweet & Sour Kielbasa
2 pounds polska kielbasa
1 cup brown sugar
1/3 cup spicy mustard
1/2 cup onions
Put all in the crock pot on low for 2 hours. The recipe can be modified to save time by making the sauce and cutting up the sausage & put them both in the freezer bag. To reheat, place in a skillet for 15 mintues until heated through.
Serve with rice or eat solo!

The Emperor’s Slow-Cooked Chicken

The Emperor’s Slow-Cooked Chicken
3 1/2 lbs fryer, parts fresh (thighs work well)
2 tablespoons vegetable oil
1/3 cup light soy sauce or 1/3 cup low sodium soy sauce, works fine
2 tablespoons brown sugar
1 teaspoon garlic, minced
1 teaspoon ginger, ground
1/4 cup almonds, slivered (optional)
green onion, sliced (optional)
DIRECTIONS:
1. In a large skillet over medium heat, brown the chicken in the oil on both sides.
2. Place the browned chicken parts in a slow cooker.
3. In a bowl, combine the soy sauce, brown sugar, garlic, and ginger.
4. Pour the sauce ingredients over the chicken parts.
5. Cover the slow cooker with a lid and simmer on high power for one hour.
6. Reduce the heat to low and cook about 5 hours longer, or until the meat juices run clear.
7. Place chicken on plates or a serving platter; spoon sauce over chicken and sprinkle with almonds and green onions, if desired.
8. (I like the sauce just a bit thicker than this recipe - I whisked together a little sauce and cornstarch in a saucepan, then gradually added the rest of the sauce until thickened to the consistency I prefer before spooning over chicken.).
9. Serves 6.

Busy Tuesday!

I just made cheeseburgers for dinner boring I know we had cheeseburgers last nite!! LOL I also have a big batch of The Emperor's chicken in the crock pot. Than made some home-made laundry soap This is the recipe I used, all comments are from who I got it from!My favorite laundry soap......... this takes a bit more work to make, but costs justs pennies and it really works well. we're farmers and we know dirt, lol This is a "Gelled" type laundry soap. It will gel up to a consistancy like soft jelly. It melts very easy in your wash water. There is never any left on your clothes after the wash cycle. One more point to make here is, with homemade laundry soaps, there are not the suds like in commerical brands. Suds don't clean cloths. The suds are just for "eye appeal" it's from by- products added to the store bought product. 1 bar of solid soap, grated ( I use Zote or fels naptha ) I buy my Zote at a Dollar General store for yes, 1.00 a bar. Its a good size bar too. 1 c washing soda 1 c borax a big bucket (2 gal ) I recyle the buckets cat litter comes in. You want a bucket with a tight fitting lid for this.
1. grate soap, entire bar.
2. add 6 cups of water to a big pan and add grated soap.
3. heat til soap melts completely. whisking as it melts.
4. add washing soda and borax and stir til dissolved.
5. remove from heat
6. pour 4 cups of hot water into your bucket, then add your melted soap mixture and stir.
7. add in 1 gallon plus 6 cups of water and stir again.
8. let sit 24 hours.
Use 1/2 c per load.

June’s Chicken
2 or more chicken pieces (I buy family packs of drum sticks or cut up a whole fryer)
1 tsp. basil
1 tsp. oregano
1 bay leaf
salt and pepper to taste
7 oz. can tomato paste
1 chopped onion
3 chopped garlic cloves
water (enough to simmer with)
Slightly brown the chicken pieces, but not totally cooked. Remove chicken and put on a plate. In oil and chicken juices cook the onion and garlic. Add spices, tomato paste, water and chicken pieces. This can be put into a slow cooker and cook all day on low, or put in the oven at 350 degrees for approximately 1 hour. Longer if the heat is reduced. Or it can be left on the stove top to simmer for about 1 to 2 hours. Serve with cooked noodles or rice or potatoes.

Good Monday Morning!!

I had a blast yesterday by myself!! Went to Walmart early to get my interfacing to finish up a purse. Than I worked out in the yard till I got too hot!! DH called around 9 & I panicked LOL the one guy didn't show up???? But he called just to tell me & I didn't have to go help him!! Yippiee!! This guy even called Saturday night to confirm they were still going to work?? What is wrong with these kids??Than my neighbor came over & looked at my purses. What she really wanted was for me to look at her lopper, the chain came off!! So fixed that for her & we chatted for abit. Then I messed around with plants on the deck & sat in the hot tub!!!
