Good Tuesday!!

Good morning!!
LOL been up since 4am??? Neighbor was gunning his engine??? Argggg so I got up & made coffee. Than been trying to do a mail merge???? 2 hours I tell ya!!! It's driving me nuts!!!! I CAN'T DO IT??????

It's after 9 & I'm finally sitting down LOL!! It's been a crazy hectic day!! Computer shop was busy, just me & the boys. Susan was doing a site survey this morning plus a few errands. Than Joker called mid morning wanted me to bring my laptop up so he lol I could help him with ebay. So I came home got the laptop & went up there for 2 hours. Then hit the Food Lion to get vegtable oil & OJ to make an apple cake that a friend has posted on her blog. Had leftovers for dinner & the apple cake is in the oven & oh my it's smelling soooo good, still has another 1/2 hour to bake!!

Mom’s Apple Cake
Refreshed: September 2015 with fresh photos, a couple additional notes and a slightly streamlined process. Hooray!
For the apples
6 apples, Mom uses McIntosh apples, I use a mix of whatever looks good
1 tablespoon ground cinnamon
5 tablespoons (65 grams) granulated sugar
For the cake
2 3/4 cups (360 grams) flour
1 tablespoon baking powder
1 teaspoon fine sea or table salt
1 cup (235 ml) vegetable oil (safflower, sunflower, olive and coconut oil also work, as does melted butter)
2 cups (400 grams) granulated sugar
1/4 cup (60 ml) orange juice
2 1/2 (13 ml) teaspoons vanilla extract
4 large eggs
1 cup (130 grams) walnuts, chopped (optional and to be honest, we never use them)
Heat oven to 350°F (175°C). Grease a tube pan. (I use this one or an equivalent one-piece tube.) Peel, core and chop apples into 1-inch chunks.Toss with cinnamon and 5 tablespoons sugar and set aside.
Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar, vanilla and eggs. Mix wet ingredients into dry ones; scrape down the bowl to ensure all ingredients are incorporated.
Pour half of batter into prepared pan. Spread half of apples (and their juices) over it. Pour the remaining batter over the apples and arrange the remaining apples on top. Bake for about 1 1/2 hours, or until a tester comes out clean.*
Cool completely before running knife between cake and pan, and unmolding onto a platter.
Do ahead: This cake is awesome on the first day but absolutely glorious and pudding-like on the days that follow, so feel free to get an early start on it. I keep it at room temperature covered with foil.
* Tip: The apples love to hide uncooked pockets of batter, especially near the top. Make sure your testing skewer or toothpick goes not just all the way down to the bottom, but does a shallow dip below the top layer of apples to make sure it comes out batter-free. Should your cake be browning too fast, before the center is baked through, cover it with foil for all but the last few minutes in the oven.

Oh what a day!!

Oh what a day!!
We left about 11am to go to the family dinner, it's 2 hour drive. Get off Rt 40 to get gas, piddle & I got coffee & DH got water. We go about 20 minutes down a country road & DH goes Dear so I'm thinking all these crazy thoughts?? LOL out of the corner of my eye I see DEER yikes!! This animal was on a mission, I said Oh Dear Lord!! It was going to run right out in front of us, & there was no where to go!! I was about to stand on the brakes & it's one hoof hit the shoulder of the road & it did an about face & all I saw was it's tail bobbing running the other way!! I don't know how it turned on a dime like that but I'm so grateful it did!! I said Thank you Lord!! Took me a bit to calm down thought I was going to be sick!! I was shaking holding the steering wheel with a death grip!! So scary!!
The dinner was good lots of food, half the banana bread was left so it's in the freezer now! My MIL started with me again about the holiday's. But I told her we will not be there for Thanksgiving but for Christmas. I said you had us for Thanksgiving last year & I was tired of the arguing between DH & I!! So I said we have 2 families that both want us to come & I planned it out this way last year to avoid all the mess!! I was shocked when she said she understood!?? So all in all a good day!

Busy day!!

Made this this morning in a loaf pan. Taste tested it yummmm than doubled the recipe & baked it in a bundt pan.

Banana Bread
Ingredients
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
Method
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Than made this
MEANT TO BE CHEESE DANISH 16 servings

2 pkgs (8 rolls each) refrigerated crescent rolls
2 (8oz) pkgs cream cheese, softened
1 1/2 cups sugar divided
1 large egg
1 tsp vanilla extract
8 Tbsp (1 stick) butter, melted
1 tsp cinnamon
1 cup chopped pecans

Preheat oven to 350. Grease a 13x9 pan. Unroll 1 can crescent rolls & press into bottom of baking dish. Press perforations together to form 1 sheet of dough. Combine cream cheese, 1 cup sugar, egg, & vanilla. Mix thoroughly. Spread over dough. Unroll 2nd can of crescent rolls & place over cream cheese. Press edges to seal. Combine melted butter, remaining 1/2 cup sugar, cinnamon & pecans. Spread evenly over top layer of crescent roll dough. Bake 30 minutes or until golden. To serve, cut into 16 rectangles

We went to a meet the candidates BBQ LOL big joke all had prior engagements!! BBQ was good served with Cole slaw, baked beans & hush puppies. They went to Big Lots had a 20% off coupon total order, get Harley's food there! Also got some laundry soap. Which I just stripped the bed, It's 10:20 here?? I'm on go instead of sleep!! Than to we went to Michael's I had a 55% off coupon so got some clover pins for my SS Santa on my quilt site, plus some felt to make a needle holder for her & some string to fix my cell phone charm! Oh & I got some sticky notes for her that were marked down to 50 cents?!! Oops hope she doesn't read my blog!!!
I took left over chicken goulash, about 1/2 cup of spaghetti sauce leftover mixed it with chicken in broth from the freezer added noodles & frozen mixed vegetables & a can of diced potatoes yum mm made a delicious stoup!! I made DH a grilled cheese sandwich to go with his & I had some crackers!

Other good news I replied to a message for a Pasta n' more on free cycle & got it!! It's new in the box, can't wait to try it!!
I called State board about being exempt from the continuing education class's yesterday, they said I've only had my hair licence since 96?? Hello it was 76 when I got it??!!
Updated today I've not heard from state board yet?? So crazy!

LOL On some comments

Some of y'all have cracked me up with your comments!! Yes the Pfaff is not included I saw that was in there after I posted the picture!!

Susan let me go home 1/2 hour early yippiee!! I stopped at Walmart on the way home get more girly stuff ughhh!! This month has kicked my butt!! Hope I can get a good night's sleep tonight!

Other bad news today my cell phone's screen went out?? I've been tying not to get a new phone. Got a new battery than a new sims card so it's been limping along. So guess I'll go to At&t in the morning something I'm dreading I don't want to sign a 2 year contract!!
I did buy some Mahi Mahi I love fish & need DH to eat more fish instead of red meat!! Anyone have a great recipe??

Wow just seen I'm coming up on my 100th post!

Cool just seen I have 95 post's this one makes 96!!! So after the Fall giveaway I'll do a 100th post giveaway!!
So it's 3am can't sleep, have cramps, PMS ughhhhh I have to work in the am??? I'm to old for this mess!! I'll be working for Susan 1 year tomorrow?? Just seems like yesterday I started, the 31st is when I quit the hair salon last year?? Where has the time gone??
