Salmon over angel hair pasta with lemon cream sauce
Oh my, I'm not a fan of cream sauce's, but this is sooooooooooo good!!







  • 3/4 cup heavy whipping cream
  • 1/4 cup chicken stock
  • 3 Tbsp lemon juice
  • 3/4 pound angel hair pasta (also called capellini)
  • Salt and black pepper
  • Salmon fillets
  • 1/2 cup (loosely packed) chopped parsley
  • 1/4 cup (loosely packed) chopped chives
  • Zest of a lemon
  • 1/2 cup freshly grated parmesan cheese


Bring a large pot of salted water to a boil.
2 In a smaller pot, heat the cream, chicken stock and lemon juice to a low simmer. Simmer gently for 5 minutes.
3 Add the angel hair pasta to the boiling water.
4 Meanwhile, heat olive oil in a skillet on medium high. Season salmon with salt and pepper and place skin side up in the oil. Cook it for 3 minutes, then flip and cook another 3-5 minutes.
5 When the pasta is done, drain and put it in a large bowl. Add the herbs to the simmering lemon cream sauce and let them cook for about 1 minute.  Add the lemon zest and most of the parmesan and mix again. Divide into servings, and top with the remaining parmesan.

Roasted Portobello Mushrooms with balsamic vinegar
I roasted these sliced portobella mushrooms with olive oil, black pepper & a splash of balsamic vinegar. NOM!!

Roasted broccoli
Toss the broccoli florets with the olive oil, garlic, salt, and pepper on a baking sheet. Spread them out and then roast, without stirring, until the edges are crispy and the stems are crisp tender, about 20 minutes @ 400

Pressure Cooker Chicken Stock

2 lb chicken parts or carcass
1 medium onion, peeled and halved
1 celery stalk, cut in several pieces
1 large carrot, scraped and cut in several pieces
2 sprigs parsley
6 peppercorns or 1/4 teaspoon ground black pepper
1 teaspoon thyme
2 bay leaves
Salt to taste
6 cups water

Combine all ingredients in the pressure cooker. Lock the lid in place and bring to pressure, then lower heat and cook for suggested time. Allow pressure to drop by the natural release method , remove the lid and strain by pouring it through a strainer which has been lined with a couple of layers of damp cheesecloth, damp kitchen towel or damp paper towels. Press with the back of a wooden spoon to extract as much liquid as possible. Cool, then refrigerate overnight and remove any congealed fat that has collected on the surface.

Cook for 30 35 minutes on high pressure.

Baked Zucchini
Ingredients:
  • 4 medium zucchini
  • 2 tablespoons Parmesan cheese
  • 1/2 cup shredded cheese
  • 1 tablespoon butter
  • 1/2 teaspoon crushed garlic
  • ground black pepper, to taste
  • salt, to taste
Preparation:
1. Slice the zucchini lengthwise and score diagonally across the top of zucchinis.
2. Place in a baking dish.
3. Baste with melted butter and garlic, sprinkle with cheese and season with salt and pepper to taste.
4. Bake in a moderately hot oven for about 15-20 minutes (or until tender and crisp).

On my walk today I saw these mini wild daisy's, so cute!!

I found some Kale on sale. It was a big bag for 99 cents!! I did this:

1 bunch of kale, washed and chopped into bite-size pieces
1 yellow onion, sliced
1-2 cloves of garlic, minced or finely chopped
2-3 tablespoons of extra virgin olive oil
Juice of 1/4 lemon
1/2 cup of vegetable broth or water ( used water)
Sea salt and pepper, to taste (optional) (I let out & added Mrs.Dash Original)

Warm olive oil over medium heat in a large pot or pan. Add onions and cook for 3-5 minutes or until slightly translucent. Be sure to stir the onions around once in a while so that they don't burn.
Add garlic and kale and mix them together with onions. Allow garlic, kale and onions to cook for one minute, then add vegetable broth and cover pot or pan for 4-6 minutes. Check kale from time to time starting at the 4 minute mark for tenderness.
Once kale is tender, add sea salt and just a few drops of lemon juice. Give it one last stir and serve.

So after a little bit of a scare last week with my blood pressure too high & a short hospital stay, not fun!! I'm on blood pressure meds, low salt diet & walk. I need to eat more veggies & fruit!! I found this blog & she has some great sounding recipes!! I made her Easy Sautéed Carrots with Onions and Rosemary. I left out the rosemary cause I was to lazy to go out & cut some. Added sage, parsley & a splash of lemon juice. Very good recipe!!!
