Man I'm run ragged!! LOL

This new job at the hair salon is running me ragged!! I've got to work all weekend again:( Than next week they are sending me to a 3 day training class! Yippie for me LOL!!
So yesterday after I did my home hair people I had a cooking marathon to get dinners for a couple of nights! I made country style ribs,meatloaf, pot roast with carrots & potatoes, baked a chicken, biscuits. Plus for dinner Thursday I fried some spots, french fries & hush puppies plus cole slaw, yummy!!
Than at Harris Tetter I found 2 eggplants in the sale bin for less than $1.00

I made this last night for my lunch today. Oh my gosh was it good
I did leave out the capers cause I didn't have any & used thin reg. spaghetti.

Eggplant Pomodoro Pasta

2 tablespoons extra-virgin olive oil
1 medium eggplant, (about 1 pound), cut into 1/2-inch cubes
2 cloves garlic, minced
4 plum tomatoes, diced
1/3 cup chopped pitted green olives
2 tablespoons red-wine vinegar
4 teaspoons capers, rinsed
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 teaspoon crushed red pepper, (optional)
12 ounces whole-wheat angel hair pasta
1/4 cup chopped fresh parsley, or basil
Preparation

Put a pot of water on to boil.
Heat oil in a large nonstick skillet over medium heat. Add eggplant and cook, stirring occasionally, until just softened, about 5 minutes. Add garlic and cook, stirring, until fragrant, 30 seconds to 1 minute. Add tomatoes, olives, vinegar, capers, salt, pepper and crushed red pepper (if using) and cook, stirring, until the tomatoes begin to break down, 5 to 7 minutes more.
Meanwhile, cook pasta in boiling water until just tender, about 6 minutes. Drain and divide the pasta among 6 shallow bowls. Spoon the sauce over the pasta and sprinkle parsley or basil on top.

Curb alert anyone??

After our company left Sunday night DH & I were cruising Craig's List & found a curb alert. So we went & got all this!! How fun!! I had to fix the lamp & looks pretty in my guest room!!



My Laptop has been acting up & thought the hard drive was going?? But don't think my hard drive is bad?? I looked up the error message I'm getting it could be a software conflict or a virus in my boot system. I got a Kodak update Saturday & this all started on Sunday & Monday my anti virus expired?? I installed the new anti virus Monday? Ahhh what the heck do I know??

We had Honey Dijon chicken for dinner yummmy!!

Honey Dijon chicken
4 (4 ounce) boneless skinless chicken breast halves
1/4 cup honey
2 tablespoons lemon juice
2 tablespoons reduced-sodium soy sauce
1 teaspoon Dijon mustard
Directions

Place chicken in an ungreased 11-in. x 7-in. x 2-in. baking dish. Combine remaining ingredients; pour over chicken. Bake, uncovered, at 350 degrees F for 35-40 minutes or until juices run clear, turning and basting with pan juices every 15 minutes.

ITALIAN RICE

makes 6 to 8 servings
1 cup long grain rice
1/3 cup whole garlic cloves
1/4 cup olive oil or bacon drippings
3/4 - 1 pound lean ground beef or pork
1/2 cup yellow onion, finely chopped
1 teaspoon rubbed sage
1 teaspoon dried Italian seasoning
1/2 teaspoon dried basil
1 1/2 teaspoons salt
1/4 teaspoons fresh ground pepper
1 (28-ounce) can tomato sauce
2 cups water
1 teaspoon sugar
1 cup grated parmesan
Heat oil in a heavy dutch oven over medium heat; add rice and garlic cloves; cook about 10 minutes, stirring constantly until lightly golden brown.
Add meat, onion, sage, Italian seasoning, dried basil, salt and pepper. Stirring frequently, cook another 10 minutes or until meat is browned.

Add tomato sauce, water and sugar. Simmer over low heat 15 to 20 minutes until rice is tender. Add up to 1-cup more water if needed.

Serve each bowl topped with grated parmesan cheese.

Gosh I tell you it never ends!!!

So we have company yet again! DBIL & friend came down Friday, they were going to be here in the morning.His 2 boys from Ohio are on vacation here. He called a few times they were here in town & did we want to meet downtown for a free concert & go on the ghost walk. We didn't go it was to stinking hot out! LOL They finally got here at 10:30!? Tired you bet! So we sat in the living for a bit & he talked about having a cook out Saturday afternoon for the kids. So Saturday morning he tells us the father, step-mom, sister & niece are all coming from Kingston too! So he had planned all this before & asked everyone to come all before he asked/told US??? How crazy is that!!!

LOL right before this was taken my MIL said what was that?? She starts jumping around screaming, Harley thought she was playing with her & she starts jumping with her, wish I had a video camera right than!! A snake slithered right over her foot & went between her legs!! Freaked everyone out!! Sorry but Harley got the snake :)

Sweet Pepper Mayo
1/2 cup mayonnaise
1/2 lemon juiced
Pinch red pepper flakes
1/2 roasted red pepper, diced
1/2 roasted yellow pepper, diced
Salt and freshly cracked black pepper
In a bowl add the mayonnaise, lemon juice, red pepper flakes, and roasted peppers. Season with salt and pepper, to taste.

Easy Rice Bake Casserole
Serves:6 servings
Ingredients
• 2 tablespoons butter, plus more for dish
1 small onion, minced
Pinch cayenne pepper
1 package frozen spinach, thawed, drained and chopped
1 cup milk
2 eggs
2 cups shredded sharp Cheddar, plus extra for top
4 cups cooked rice
1 teaspoon freshly chopped parsley leaves
1 teaspoon freshly chopped thyme leaves
1 teaspoon chopped basil leaves
Salt and freshly ground black pepper
Directions
Preheat oven to 350 degrees F. Butter a large casserole dish.
In a large pan over medium-high heat, saute onions with 2 tablespoons of butter and cayenne until translucent. Add the spinach and cook for 3 minutes. Set aside.
In a large bowl, whisk together milk and eggs.
Add the cheese, rice, parsley, thyme, basil and spinach mixture and combine well. Season with salt and pepper.
Pour into prepared casserole dish and top with extra shredded cheese. Bake for 30 minutes and serve piping hot.

Fresh Pasta anyone?

I found a pasta machine at a yard sale!!
So I had to make some fresh pasta!! All I can say is yummmmmmm!!

Here's the recipe I used.

PASTA DOUGH

2 c. flour
2 eggs
1 tbsp. olive oil
3/4 tsp. salt
Warm water
Equipment: Food processor, pasta machine
Combine all ingredients, except water, in food processor. With processor running, add enough water to form a firm ball of dough. Remove from processor; cover and let rest for 1 hour. Cut into golf ball size pieces. Dredge with flour and put through pasta machine. Use wide strips for lasagna or ravioli or put through spaghetti cutter. Use immediately or dry for future use. Freeze pasta if not used within a day or two.

Happy August y'all!!!

It's just too stinking HOT!!
I've been busy cleaning, moving furniture, mopping floors, waxing hardwood floors. LOL I feel like Cinderella!! My back can attest to that!! Ice packs are my friend!! In my kitchen my island is the HOT spot ughhh drives me bonkers!! So for 8 days in a row it has been cleaned up!! I love it!!
I also been messing around with the quilting machine & did some feathers, need more practice! I'm learning how to baste around the edges too!
Don't know if you can really see the feathers? Don't mind the chalk lines, they were just a reference mark.

I also won a digital pressure cooker on Freecycle!! Wahoo!! They said it didn't work right. Went to the right pressure than stopped & went to the stay warm cycle. So I picked it up tonight & it's a Cuisinart!!!!!!!!!!!AWESOME!! It was kinda dirty ewwwwwww but don't want to really say anything bad, found out the person giving it away is a friend of my Mom's! So anyway I cleaned it up & had no trouble with it at all??? Sweet!! Check it out here!
