DH update
DH got his test results from the clinic yesterday. Good cholesterol is low, bad cholesterol is high, sugar is a tad high, blood pressure is a tad high, triglyceride is high, prostate is normal. Has to cut back on eggs, red meat & fast food. Eat more fish, fruit & fresh veggies. Plus walk at least 30 minutes a day!!
His brother called might need him this week coming plus he has a bedroom to paint & went & priced a job for a kitchen & laundry room

DATE-NIGHT CHICKEN
I got about 30 lbs of chicken??? about 8 bucks???
So I have this recipe to try too!!
QUICK SUPPER: DATE-NIGHT CHICKEN
Hands-on time: 30 minutes
Time to table: 60 minutes
Serves 2 with leftovers or 4 without
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts
Pepper to taste
1 pound fresh broccoli
1 can low-fat mushroom soup
½ cup low-fat mayonnaise
2 teaspoons curry powder (don’t skip this)
Small squeeze lemon juice
1 cup grated cheddar cheese
Egg noodles, cooked and tossed with butter
If baking right away, preheat oven to 350F.
In a skillet, heat olive oil on medium til shimmery.
Meanwhile, cut breasts into two or three pieces each.
Drop into hot skillet, sprinkle with pepper, cook for 3 minutes without moving. Turn over, cook 2 more minutes.
Turn off heat.
While meat cooks, cut broccoli tops into bite-size florets, arrange around perimeter of a large baking dish.
Peel stems (because they’re tough) with carrot peeler, slice into ¼ inch coins and arrange in center.
Cover with plastic wrap and microwave for 2 minutes.
Remove plastic, arrange chicken in center over stems.
In a bowl, stir together soup, mayo, curry and lemon juice.
Spread evenly across top. (If you’re cooking ahead, stop here, cover with plastic and refrigerate.
A half hour before serving, remove from frig and preheat oven.)
Sprinkle cheese over top.
Bake for 30 minutes or until bubbly and hot all the way through.

OK here's what I have in the crock pot!! It was kind of like a paste when it's first mixed together, but wow it has turned in to full flavor rich like sauce! I've decided not to add the macaroni to it, just serve it over!!

1 red pepper, chopped
1 pound frozen vegetables, thawed
1/2 cup elbow macaroni
Stir together the salsa, peanut butter, soy sauce and lime juice in a slowcooker.
Tuck the chicken pieces into the salsa mixture, covering completely.
Cook on medium heat for about 4 hours.
An hour before serving, add the pepper, vegetables and macaroni.
Cook for another hour or until the vegetables and macaroni are cooked. Serve and enjoy!

crazy weather>??
OM-Gosh y'all DH got a thing in the mail ya know come to our car dealership get prizes yada yada yada!!
So we go this morning, get to the parking lot.
They are like vultures tee hee I stay in the truck, cause I know he can't get into trouble without me!!
Ha ha this dude drives up & go's inside, he comes out his dog has gotten sick all over the floor ,door, etc. hee heee.
Said salesman being the big man he is goes I'll get a trash can & paper towels.

Yummy Dinner!!
Hi all!!
Been a busy day here, we got firewood from my neighbor.
She had a tree cut down & we went over & cut it up some more, than threw it over the fence.
Did 2 loads of laundry & hung them outside.
Harley got a bath too.
Than we both took showers & went to Big Lot's, looking for a spatula. Mine broke:( I want a solid metal one this time!
Than made these for dinner & my DH is not a salmon eater & he ate 2!! They are OMGosh good!!
Fresh Salmon Cakes
2 cloves garlic; minced
2 tablespoons minced onion
2 dashes Tabasco (or 1 teaspoon Old Bay)
1 egg yolk (or egg white)
2 tablespoons chopped parsley
2 tablespoons real mayonnaise
1/2 teaspoon kosher salt (less if table salt)
fresh ground pepper to taste
2/3 cup coarse white bread crumbs
1 pound fresh salmon 1/2 cup Panko (Japanese bread crumbs)
2 or 3 tablespoons olive oil
In a small bowl, combine garlic, onion, Tabasco, egg, parsley, mayonnaise, salt and pepper; set aside. Remove skin and bones from salmon and cut into small cubes (about 1/2-inch); place in a medium bowl and gently stir in bread crumbs. Gently fold egg mixture into salmon and bread and refrigerate at least 2 hours before shaping into 4 patties. Carefully coat the outside of each patty with Panko crumbs. Heat oil in a non-stick skillet over medium-high heat until very hot and add salmon cakes. Fry the cakes until brown, about 4 minutes on each side turning only once. Serve with lemon wedges or your favorite tarter sauce. *May substitute cracker crumbs or bread crumbs for the Panko
This was posted with it but didn't make it no cucumber. Next time!! Cucumber Dill Sauce:
1 cucumber; unpeeled
1/2 cup sour cream
1/2 cup mayonnaise
1 teaspoon dill (if fresh use 1 tablespoon)
1/2 teaspoon lemon juice
salt and pepper to taste
Cut cucumber in half and scoop out the seeds. Shred cucumber finely along with the peel and combine with remaining ingredients. Chill to combine flavors. Serve with your favorite grilled or baked fish. Also good with salmon patties or crab cakes.

Turkey breast
My turkey breast came out fabulous!!!
Moist and Tender Turkey Breast Recipe #102335
A girlfriend told me about the mayo trick when I was first married and I've never roasted a turkey or turkey breast without it since. The skin is crisp and flavorful and the meat is tender, moist and delicious. If you don't use the butter and broth, you will not have enough pan drippings to make gravy and you don't want to do that because this combo makes the best tasting gravy I've ever had. I've also added 1/2 cup of beer or wine to the mixture before and it was also spectacular. With slow roasting it, the meat stays so juicy I've actually had it squirt out when I insert the thermometer! I've never had a better turkey or turkey breast.

3¼ hours 10 min prep SERVES 12 ,
1 turkey 1 (5-20 lb) fresh or frozen turkey breast (thawed) or turkey
1/4 cup butter, melted
1 (10 1/2 ounce) can chicken broth
1-2 tablespoon mayonnaise
Place turkey or turkey breast in a roasting pan. (I use a foil-lined 13x9-inch pan)
Combine melted butter and chicken broth.
Pour over turkey.
Rub mayonnaise all over turkey's exterior.
Salt lightly if desired. Roast at 300°-325°F until internal temperature reaches 170°F on an instant read thermometer. (I raise the temperature to 350° for the last approximate 30-45 minutes to crisp skin).
Remove from oven and let sit for about 30 minutes before slicing.

Wahoo I'm excited!!
I signed up for a fall quilt give away that starts Oct. 1. I need to find a prize to give away??? Yikes, oh it's only the 12th! So have a bit of time to find a cool prize!
On the home front DH did get the message!! Don't think he'll be eating at the bar anytime soon!! LOL
We did get some food shopping in today. Have a turkey breast to cook tomorrow, not sure how I'm going to cook it. We had sloppy joe's with potato salad & cole slaw tonight. Going to freeze the rest of the ground beef into burgers. We got more yeast to make more Angel biscuit dough, he loves having fresh biscuits in the morning!!
DH has a man's free health screening appt. in the morning at the health dept so he can't eat or drink anything after midnight. So i'll be on my own for a bit. Have yard work alway's! Got my neighbor's yard done this morning, DH cut our back so just the front needs cutting. Still have more to do on that monster rose bush. And I've been working on a front flower bed, digging some weeds & dirt out, so I hopefully can top it with mulch to keep the weeds down!
Or I could forget all that & sew!!

I'm being tested for sure!
I worked from home today, DH went & filled out an application. He wanted to know if I wanted McDonald's this morning, no thank you. Than he was going to cook sausage & egg's & did I want that, no thank you. I didn't plan any dinner after he planned his own dinner last night!! LOL I'm a witch! So after my last one at 7 I said I was going to Food Lion, no dog food or cat food. He wanted to go said he was getting hungry & he would buy McDonald's. So I had some french fries & he was like don't you want this burger?? No thank you!! So I have no meals planned out, gonna let him figure it all out!! He hurt my feelings by thinking of himself only last night?!
Remember when I almost went head first off the ladder?? I did smack my face/lower jaw on the tray. I think I did something to my bottom front teeth?? I need this like I need a hole in the head?? So need to make an appointment with the dentist ughhhh not fun!!
I see there's part of this story missing from yesterday

Lord give me strength!!
Ugggghhhhhhhhhhhhhh I'm so frickin disgusted seems like I paid for my half of the house to be put in mine & DH's name & my ex's name is still on the other half of it??? I do have a court order that states I do get the house, just that my ex never signed it??So I have to figure out what to do?? Go to supreme court 25 hundred dollars or hire a PI to find him to get him to sign???I'm going to call my original divorce atty. & find out what I'm supposed to do!! I hate my life at this moment!!

Good morning!
Yippee I have my own Internet back!! Over 15 hours without!! LOL I called to see if they were going to give us credit for the outage, yes!! I got 1.33 credited back! WOW
I only got one number on the power ball so I have to work today!I woke up at 2:30 with cramps:(
I called the attorney back , she never called me back last week?? So I talked to someone in the office & they told me I had to call the other one?? ughhh so I did & it is filed & has been filed since 2004! So I have to call her back today & give her some book & page numbers! What a relief!!
Have to do a haircut at 9 than have a couple of hours before the next than it's steady going!! So in that time space I'm going to move a couple of plants off the deck railing. So Hanna don't blow them off!!
Ekk need to get in gear!!

Good morning
DH & I have been working on our honey do list! We have got a couple of boards screwed down on the deck, replaced a panel on the garage door & been wacking that huge monster rose bush down! That rose bush is something else can't walk by it without it grabbing ya!!
LOL so before it takes over the whole yard we decided to wack it down!Here it is from last year I think
DH want to grill out burgers & hot dogs today. Need hot dogs & a salad of sorts??I want to bake some oatmeal bread too!
Hope all in the path of the storm stay safe!
