CROCKPOT CHICKEN GOULASH

OK here's what I have in the crock pot!! It was kind of like a paste when it's first mixed together, but wow it has turned in to full flavor rich like sauce! I've decided not to add the macaroni to it, just serve it over!!


QUICK SUPPER: CROCKPOT CHICKEN GOULASHA one-pot meal for extra busy days
Hands-on time: 10 minutes to start, 5 minutes an hour before serving Cooking time: 5 hours on medium heat Serves 4
12 ounces mild salsa
1/4 cup peanut butter
1 tablespoon soy sauce
Juice of a lime
1 pound boneless, skinless chicken thighs or breasts, in four pieces
1 red pepper, chopped
1 pound frozen vegetables, thawed
1/2 cup elbow macaroni
Stir together the salsa, peanut butter, soy sauce and lime juice in a slowcooker.
Tuck the chicken pieces into the salsa mixture, covering completely.
Cook on medium heat for about 4 hours.
An hour before serving, add the pepper, vegetables and macaroni.
Cook for another hour or until the vegetables and macaroni are cooked. Serve and enjoy!
