Magic Cake, OH MY!!!

Super yummy & not too sweet!!!
 Magic Cake
 4 eggs (separate yolks from whites) at room temperature
1 tbsp water 3/4 cup sugar
 1 stick butter, melted
 3/4 cup of flour
 2 cups milk lukewarm
powdered sugar for dusting cake
Instructions:
 Preheat oven to 325 F degrees. Grease a 8 inch x 8 inch baking dish. Separate eggs and add the egg whites to a mixer and mix until egg whites are stiff. Place egg whites in a bowl and set aside. Beat the egg yolks with the sugar until light. Add butter and tbsp of water and continue beating for another minute or two after which you can add the flour and mix it in until fully incorporated. Slowly start adding the milk and beat until everything is well mixed together. Add the egg whites, a third at a time and gently fold them in using a spatula, repeat until all egg whites are folded in. Pour batter into baking dish and bake for 60 to 70 minutes or until the top is lightly golden. Sprinkle some powdered sugar after cake has cooled.

So time has slipped away from me again :(

So my last chemo was March 28, YAY!! I hope to never do that experience again!! Sorry I didn't get a view picture. I also turned 55 (ekkkkkkkkkkkk) on March 25 Received these lovelies!!









  Made myself a killer banana cake, NOM!The icing is killer!! Recipe Here




  Than I used scraps from the Tradewinds quilt & made pot holders. I gave them away & she loved them said they matched her kitchen perfectly!!


  So all in all I'm hanging in there! I have a Drs. appt. here on May 2nd then a pre op appt in Chapel Hill on May 31st than surgery June the 13th. Lots of paperwork & lots of things I have to do before hand. Just trying to get my ducks in a row!!

My View Yesterday

So they changed my appt. from Thursday to Wednesday, cause the Dr. is off. This was my view, had my own room & had only ONE CHAIR in it. Was way more roomy than the other one. Only cell service sucked in there!! Was right by the in-coming door & everyone coming in had to look in my room I felt like a circus monkey!!! LOL Wasn't so great when they gave me a new Anti-nausea med in the IV made me nausea??? Plus it added 30 more minutes to my already 6 hours?? No THANKS!! So the GOOD NEWS!!! Chemo is working!!!! Has shrunk the tumor!!! So only have to go thru the rest of round 3, than one more round!!!!!!!!!!!!! So last chemo should be March 28th!! PRAISE THE LORD!!!! Than on to Chapel Hill to find out when surgery is, CT scans, etc......... Oh forgot this part, I have a high white count so they put me on antibiotics, some of the side effects are crazy!!! It's Ciprofloxacin 500 mgs twice a day!!

Been slacking So spent 2 hours getting chemo on Valentine's Day & this was my view momchemoview I made this for the nurses, so hopefully they will forgive me for being so crabby last week!!
 Saltine Cracker Candy
 40 salted saltine crackers (or enough to line your pan)
 1 cup unsalted butter
1 cup packed brown sugar
 2 cups milk chocolate or semisweet chocolate chips
(optional) 3/4 cup chopped pecans
 Preheat oven to 400. Line a 9x13-inch pan with aluminum foil. Line pan with saltine crackers in a single layer. In a small pot combine sugar and butter. Bring to a boil and continue boiling for 3 minutes. Mixture should be a deep caramel color. Immediately pour over saltines and spread to cover crackers completely. Bake for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Place back in oven for 1 minute. Remove from oven and spread melted chocolate chips over crackers. Top with chopped nuts. Allow to cool and break into pieces. saltinetoffee Than I took some puff pastry & parmasan cheese & did this! parmcheesesticks I can't color my hair?? They say it's too hard on it?? LOOK at all that grey!!! me I found out some stuff on Friday about the surgery & I'm not really happy about it :( They said it was discussed in Chapel Hill?? Both my Mom & I don't remember it?? I have 2 CT scans with contrast on Friday morning. Ughhhhhh have to drink some white stuff tomorrow night than another at 6am, ewwwwwwwwwwwwwww than they might make me drink more there??!!!!!!!!!!!
