Ham and Potato Soup

I had a few potatoes to use up and it's been so very cold here.
I didn't use the whipping cream, just a tad of half and half.
It's a keeper!!

Ham and Potato Soup
From Simply Recipes

  • 2 Tbsp olive oil
  • 1 1/2 cups chopped onion
  • 3/4 cup chopped parsnips or carrots
  • 3/4 cup chopped celery
  • 1 minced garlic clove
  • 1 meaty ham bone from a ham, or a meaty ham shank
  • 6 cups low sodium chicken stock
  • 2 bay leaves
  • 2 sprigs thyme
  • 2 pounds Russet potatoes, peeled, and cut into 3/4-inch cubes
  • 1 1/2 cups cubed ham (if using a ham bone), 3/4-inch dice
  • 1/2 teaspoon ground pepper
  • 1/4 cup whipping cream
  • Salt to taste

METHOD

Heat olive oil in a large, thick-bottomed pot or Dutch oven on medium high heat. Add the onions, parsnips or carrots, celery, and sauté for 7 to 8 minutes. Add the garlic and cook for a minute more.
2 Add the ham bone or ham shank to the pot. Add 6 cups of stock. Add bay leaves and thyme. Bring to a boil, lower the heat to maintain a simmer. Cover and simmer for 45 minutes.
3 Add the potatoes and simmer for 15 more minutes, until they are cooked through. Remove the ham bone or ham shank from the soup. Purée half of the soup so that some of the potatoes get puréed to give the soup body, and there are still whole chunks of potatoes for texture.
4 If using a ham shank, cut away the meat and chop into 3/4-inch cubes. Add the chopped ham and black pepper to the soup.
5 Stir in the cream. Taste for salt and pepper and add more if needed.

Grilling!!

Campfire Potatoes
 1½ lb New Red Potatoes
 1 large Onion
 1 tbsp Minced Garlic
 4 tbsp Butter
1-2 tbsp Worchestershire Sauce
 ⅛ tsp Cayenne Pepper
Salt and Pepper to taste
Instructions
Slice potatoes and onion into ⅛ - ¼" slices. Place on piece of aluminum foil large enough to fold over and to be able to roll up edges. Top with garlic, butter, Worchestershire and cayenne. Fold packet over and roll edges to close. Leave on medium grill for 30 minutes or in 350 oven (in a pan to avoid messes) for 35-40 minutes.

 I left out the Worchestershire sauce

Sweet Potato Hash Browns


Sweet Potato Hash Browns
Serves 9
Ingredients
  • 4 medium sweet potatoes
  • 2 eggs, whisked
  • 1/2 cup almond flour
  • 2 teaspoons sea salt
  • 1/4 cup green onions, chopped (plus some for garnish)
  • 1/4 cup coconut oil
Instructions
  • 1
    1. Pierce one of the sweet potatoes with a fork. Wrap it in a damp paper towel and place it in a small bowl with 1/2 inch of water. Microwave for 7-9 minutes, or until tender.

    2. Let this sweet potato sit for 5 minutes. Then drain the water, peel the potato, and mash it with a fork.

    3. Take the other 3 sweet potatoes and peel them. Then grate them on a box grater using the large holes. In your bowl of grated sweet potatoes, add the previous mashed potato, the 2 eggs, almond flour, sea salt, and green onion. Combine with a spoon.

    4. In a skillet (I used cast iron), pour coconut oil and heat over medium until your cast iron is hot. If you have a thermometer, it should read 350 degrees. Then drop in sweet potato "cakes" in about 2-3 tablespoon batches. Flatten them with a spatula. Cook on each side for 5 minutes or until golden brown.

    5. Once cooked, place on a plate with paper towels to drain the oil. Serve HOT!
I halved the recipe used AP flour and vegetable oil. Mine are not Paelo

Scalloped Potatoes


  



I tried this, used my new expensive stainless steel 5x6 1/2 pan!! 50 cents at the thrift shop!!

Scalloped Potatoes

2 medium potatoes sliced thin
2 TBS butter
1 heaping TBS flour
1 cup milk
1 cup of cheddar cheese
Salt
Pepper
Garlic powder
Onion powder

Melt the butter over medium heat. Add the flour, stir good.
Add the milk, stir till no lumps.
Add the cheese and spices. Stir till cheese is melted.

Grease a small pan. Layer potatoes in the bottom .
Add half of cheese mixture and repeat.
Bake at 350 for about 40 minutes.

Serves 2

October already??

Wow has time flown by!!

I got Mom's quilt finished yesterday! Yippie

Than on Thursday I had hair clients all spread out so lots of free time. My 4 1/2' shoebox of squares was over flowing. So I got 4 baby quilts out of them. Two mild & two wild!! LOL One has borders & ready for the frame. Need to find border fabric for the rest.

We have Homecoming at Church today. I'm bringing Ritzy Potatoes/Funeral Potatoes.

6 potatoes -- cooked, peeled, and grated or cubed (6 to 8)
1/2 c. minced onion
1 can cream of chicken soup
1 pint sour cream
1/2 c. grated cheese
3/4 tsp. salt
optionally:
2 tbsp. melted butter
1 c. crushed cornflakes

Spread potatoes in a buttered casserole dish. Heat soup, sour cream, and onion in sauce pan, then pour over potatoes, but DO NOT STIR. Sprinkle cheese on top or mix the cheese, butter, and cornflakes together, and then sprinkle them on top.

Bake at 350 F. for 30 minutes.

I use a 2lb. bag of frozen hashbrown the cubed kind. And I do stir it all together. I think it's a great dish to bring cause it makes a lot & it's good!

Golden Potatoes




Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cans whole white potatoes -- (16 oz. each) drained
1/4 C. butter or margarine -- melted
1/2 tsp. seasoned salt (Lawry's is the best!)
2 Tbsp. grated Parmesan or Romano Cheese
1 Tbsp parsley

Place potatoes in an ungreased 8 inch square baking dish. Pour butter over potatoes. Sprinkle with seasoned salt, cheese and parsley. Bake, uncovered,

at 350 degrees for 25 minutes

I used fresh potatoes sliced in the food processor & baked 30 minutes. Going to put them back in the oven to heat up for dinner.

Crumb Coffee Cake

3 3/4 cups flour
1 3/4 cups sugar
1/4 pound butter (l stick) -- softened
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs
2/3 cup milk
Topping:
1/4 pound butter -- (1 stick)
1/4 cup brown sugar
2 teaspoons cinnamon
1 pinch salt
confectioner's sugar (for dusting)

1) Mix together in a large bowl flour, sugar, baking powder, salt; and set aside 2 cups of this mixture for the topping.

(2) Add butter, eggs and milk to flour mixture in large bowl and mix well.

(3) Grease and flour a 13-inch rectangle baking pan. (I used PAM spray w/flour)

(4) Spread batter in prepared pan.

(5) Preheat oven to 350 degrees.

(6) For Topping: Take the 2 cups of reserved flour mixture and add to the butter, brown sugar, cinnamon and salt. Mix together with your fingers until blended and lumps begin to form when you squeeze the mixture making small pea-sized crumbs.

(7) Cover the entire cake with the crumbly mixture.

(8) Bake for 30 minutes.

(9) When cooled, dust with confectioner's sugar


Mom gave me this Rag Quilt kit. She was going to make it for my Dad when he was so sick & always cold. But never got around to it. So I've been looking at it for awhile, put in the closet.She told me to make it for my hubby! So I got 5 rows done!! And YES I'M STILL IN MY PJ'S!!! LOL
