Hearty Italian Sausage Soup Recipe

Hearty Italian Sausage Soup

1 lb Italian sausage, sliced

1 onion, chopped

2 clove garlic, minced

1 tsp olive oil

2 can(s) (14 oz. each) 25%-less-sodium chicken broth (I used homemade stock)

1 c water

1 can(s) (15 oz.) cannellini beans, rinsed

1 can(s) (14.5 oz.) stewed tomatoes, undrained

1 c rotini pasta, uncooked

1 1/2 c baby spinach leaves (left out)

1/2 c 2% milk shredded mozzarella cheese

saltine crackers

1 Tbsp oregano

salt & pepper, to taste

Directions

1. COOK sausage, onions and garlic in oil in a large saucepan 10 min., stirring frequently.

2. ADD next four ingredients and seasonings. Bring to a boil. Stir in Pasta; cook 8 min. or until tender. Remove from heat.

3. STIR in spinach; cover. Let stand 5 min. Top with cheese. Serve with crackers.

Yay hit the produce jackpot!!

I stopped at the food store on the way home tonight to get stuff to make a hearty Italian soup tomorrow. I found some carrots with garlic & herbs for 59 cents a bag, got 4 & 3 cloves of garlic for 17 cents!!! SWEET!!

So I did it!!
Been behind most of the time but here it is the final picture!!
Two Prayer Shawls, My Mom made the red one & the ladies at my church made the white one. The white one went to Chapel Hill with Mom & I.
I get to met my Oncology Dr. on the 8 of January, Chapel Hill is allowing me to do Chemo here instead of there. I don't know where this journey will led too, but will tell you it's scary!!

Dashboard of my brother's Mini Cooper, cool!!!
He picked me up from the hospital late yesterday morning. Remember I was having kidney stones & a bladder infection that would not go away. Anyway they sent me to a urologist last Thursday & they did a cystoscope he found a tumor the size of a half dollar. So I had surgery on Wednesday morning spent the night in the hospital. They ordered bed rest with constant flushing of the bladder, morphine every 2 hours. I have to wear a catheter till Monday morning, So not fun!! Still in pain & can't sit down for long :(

Pork Fajitas

I used this recipe as a guideline, just made enough to use. I left out the chicken bouillon cube.

Fajita Seasoning

All you need:

¼ teaspoon garlic powder
½ teaspoon onion powder
¼ - ½ teaspoon cayenne 
¼ teaspoon cumin
1 teaspoon paprika
1 teaspoon salt
2 teaspoons chili powder
1 teaspoon sugar
1 chicken bouillon cube, crushed
