Monster Cupcake Anyone??

LOL I saw these in the Taste of Home magazine & had to make them!! Too funny!!
I didn't buy the M&M's for the eyes? forgot to get them, guess my age is catching up on me!!
Orange You Spiky




Southwestern Pork & Rice Soup
6 cups Kitchen Basics® Unsalted or Original Chicken Stock
2 Tbsp. olive oil
1 lb. boneless pork loin, or pork tenderloin, cut into cubes
1 medium onion, chopped
2 garlic cloves, minced
2 jalapeno chilies, seeded and chopped (left out, DH is spicy wimp)
1 red bell pepper, seeded and chopped (left out forgot to buy one:?()
1/3 cup long-grain rice
¼ cup minced fresh cilantro
Juice of 1 lime

In a large saucepan over medium-high, heat 1 Tbsp. of the olive oil. Add the pork and cook until golden brown on all sides, about 6 minutes. Cook in batches if necessary to avoid crowding. Using a slotted spoon, transfer to a plate. Reduce the heat to medium and heat the remaining oil. Add the onion, garlic, jalapeno, red pepper and rice and stir to coat with the oil. Add the stocks and bring to a boil. Reduce heat to low, cover and simmer about 15 minutes until the rice is tender. Salt and pepper to taste.

Added a can of White Acre Peas ( variation of field peas) to make it a full meal. Served it with corn muffins. Yummy!!
I would add a bit more rice next time.

Oh..whew....I thought that was the recipe for the cupcakes! I was thinking "strange cupcakes!"

I think the cupcakes are really cool for Halloween.

Those cupcakes are too stinkin' cute! I like the way you did the eyes...who needs M&Ms? LOL!!! Bet they were a hit with the kiddos!
