I started to pick the ripe black berries before the birds get them. These are all cleaned & ready for the freezer, till the rest ripen!!! Yummmmmmmm

So now the shabby chic bug has hit me!! LOL I'm redoing my mantle, my family room is so dark. So I've been calling it the man cave!! So no man & I'm taking it back!! MINE!!!

Nom I had a friend over for dinner yesterday made this Spanish Chicken. It's a keeper!!
4 boneless, skinless chicken breast
halves
2 tablespoons vegetable oil
1 medium onion, chopped
1/4 cup chopped green pepper
1 garlic clove, minced
1 (14.5 ounce) can diced tomatoes,
undrained
1 cup water
3/4 cup uncooked long grain rice
2 teaspoons chicken bouillon granules
1 teaspoon chili powder
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cumin
1/8 teaspoon pepper
1/2 cup picante sauce
1/2 cup shredded Cheddar cheese
1 (2.25 ounce) can sliced ripe olives,drained
In a large skillet, brown chicken in oil for 2-3 minutes on each side. Remove and keep warm. In the same skillet, saute the onion, green pepper and garlic until tender. Stir in the tomatoes, water, rice, bouillon and seasonings. Bring to a boil. Pour into a greased 11-in. x 7-in. x 2-in. baking dish; top with chicken.
Cover and bake at 350 degrees F for 35-40 minutes or until rice is tender. Uncover; spoon picante sauce over chicken and sprinkle with cheese. Bake 5 minutes longer or until cheese is melted. Garnish with olives.

Remember my sad rusted chair base?? This is it transformed into a fun sunny table on my deck!! Sanded it than spayed Kilz on it than a bright sunny yellow spray, than a wash of purple!! LOL I love it!!

I made this Easy Rice Bake Casserole to take to work yesterday.
It's really good you should try it!!
Easy Rice Bake Casserole
2 tablespoons butter, plus more for dish
1 small onion, minced
Pinch cayenne pepper
1 package frozen spinach, thawed, drained and chopped
1 cup milk
2 eggs
2 cups shredded sharp Cheddar, plus extra for top
4 cups cooked rice
1 teaspoon freshly chopped parsley leaves
1 teaspoon freshly chopped thyme leaves
1 teaspoon chopped basil leaves
Salt and freshly ground black pepper
Directions
Preheat oven to 350 degrees F. Butter a large casserole dish.
In a large pan over medium-high heat, saute onions with 2 tablespoons of butter and cayenne until translucent. Add the spinach and cook for 3 minutes. Set aside.
In a large bowl, whisk together milk and eggs.
Add the cheese, rice, parsley, thyme, basil and spinach mixture and combine well. Season with salt and pepper.
Pour into prepared casserole dish and top with extra shredded cheese. Bake for 30 minutes and serve piping hot.

I got one of the girls at work to take a picture of my hair, LOL I've been growing it out & can't believe how long it's gotten!! I did let her trim it up after I saw how sad the bottom looks!!
