Season both sided of pork chops with salt, pepper and red pepper flakes. Add a little olive oil to pot, brown pork chops on one side only. Remove pork chops and turn off heat. Add rice and broth, stir well scrapping up any brown bits off the bottom of the pot. Arrange celery on top of rice, then pork chops. Cook at high pressure for 4 minutes. Turn off and let rest 5 minutes before performing a quick release.</span><br />

Soft Cranberry Sugar Cookies<br />
Ingredients<br />
10 oz. Craisins or other sweetened, dried cranberry<br />
1 1/2 cup sugar (plus extra for rolling)<br />
1 cup Crisco<br />
2 eggs<br />
3 1/2 cup flour<br />
1 tsp baking soda<br />
1 tsp vanilla<br />
Instructions
Preheat oven to 350.
Combine Craisins and 1 cup of water in a saucepan and bring to a boil. Reduce to a simmer and cook until all of
the liquid has been absorbed. Remove and let cool.
Combine flour and baking soda in a bowl.
In a separate bowl, combine sugar, Crisco, eggs and vanilla, and mix until smooth.
Add Craisins and flour mixture alternately.
Mix well.
Shape into small balls (about 1 1/2" big) and roll in sugar until the ball is thinly coated.
Bake 10-15 minutes until edges are slightly browned.
Notes
You can use raisins in place of Craisins if you prefer.<br />

1½ lb New Red Potatoes<br />
1 large Onion<br />
1 tbsp Minced Garlic<br />
4 tbsp Butter<br />
1-2 tbsp Worchestershire Sauce<br />
⅛ tsp Cayenne Pepper<br />
Salt and Pepper to taste<br />
Instructions<br />
Slice potatoes and onion into ⅛ - ¼" slices.
Place on piece of aluminum foil large enough to fold over and to be able to roll up edges.
Top with garlic, butter, Worchestershire and cayenne.
Fold packet over and roll edges to close.
Leave on medium grill for 30 minutes or in 350 oven (in a pan to avoid messes) for 35-40 minutes.<br />

Then, leave the cake in the pan, cover loosely with plastic wrap, and refrigerate until completely cold, preferably overnight or for at least 4 hours. </span><br />

Gradually add the remaining sugar and continue beating until stiff peaks form (the whites will stand up and look glossy, not dry). Fold about one-third of the whites into the batter, then the remaining whites. Don't worry if you still see a few white specks, as they'll disappear during baking.</span><br />
