Chicken With Parmesan Noodles
Servings: 4 servings
Start to Finish: 20 minutes
Ingredients
1 9-oz. pkg. refrigerated angel hair pasta
4 large carrots, thinly sliced
2 Tbsp. butter
1-1/2 lb. skinless, boneless chicken breast halves
1/4 cup purchased basil pesto
1/4 cup finely shredded Parmesan cheese
Olive oil (optional)
Fresh basil (optional)
1. Cook pasta according to package directions.
2. Meanwhile, in 12-inch skillet cook carrots in 1 tablespoon melted butter over medium heat for 3 minutes.
Add chicken; cook and stir 4 to 5 minutes or until no pink remains in chicken. Add pesto; toss to coat.
3. Drain pasta. Return to pan; toss with remaining butter.
Serve with chicken mixture.
Sprinkle pasta with Parmesan cheese and ground black pepper.
Drizzle with olive oil and top with basil.
Makes 4 servings.

Oven Baked Bruschetta Chicken

Oven Baked Bruschetta Chicken

1/2 cup flour
1/2 cup egg substitute
4 boneless, skinless chicken breast halves (about 1 pound)
1/4 cup grated Parmesan cheese
1/4 cup dry bread crumbs
1 Tablespoon butter, melted
2 large tomatoes,chopped
3 Tablespoons fresh basil
2 garlic cloves, minced
1 Tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
Place flour and eggs in separate shallow bowls. Dip chicken in flour, then in eggs; placed in a greased 13-in. x 9-in. x 2-in. baking dish. Combine the cheese, bread crumbs and butter; sprinkle over chicken. Loosely cover baking dish with foil. Bake at 375 for 20 minutes. Uncover; bake 5-10 minutes longer or until top is browned. Meanwhile, in a bowl, combine the remaining ingredients. Spoon over the chicken. Return to the oven for 3-5 minutes or until tomato mixture is heated through.

IF I HAD MY LIFE TO LIVE OVER - by Erma Bombeck
(written after she found out she was dying from cancer). I would have gone to bed when I was sick instead of pretending the earth would go into a holding pattern if I weren't there for the day. I would have burned the pink candle sculpted like a rose before it melted in storage. I would have talked less and listened more. I would have invited friends over to dinner even if the carpet was stained, or the sofa faded. I would have eaten the popcorn in the 'good' living room and worried much less about the dirt when someone wanted to light a fire in the fireplace. I would have taken the time to listen to my grandfather ramble about his youth. I would have shared more of the responsibility carried by my husband. I would never have insisted the car windows be rolled up on a summer day because my hair had just been teased and sprayed. I would have sat on the lawn with my grass stains. I would have cried and laughed less while watching television and more while watching life. I would never have bought anything just because it was practical, wouldn't show soil, or was guaranteed to last a lifetime. Instead of wishing away nine months of pregnancy, I'd have cherished every moment and realized that the wonderment growing inside me was the only chan ce in life to assist God in a miracle. When my kids kissed me impetuously, I would never have said, "Later. Now go get washed up for dinner."
There would have been more "I love you's" More "I'm sorry's." But mostly, given another shot at life, I would seize every minute...look at it and really see it, live it and never give it back. STOP SWEATING THE SMALL STUFF!!! Don't worry about who doesn't like you, who has more, or who's doing what. Instead, let's cherish the relationships we have with those who do love us. Let's think about what God HAS blessed us with, and what we are doing each day to promote ourselves mentally, physically, emotionally.

Why???

OK y'all really ready for this crap??
I've been doing my bills online & pay attention to it really careful! I noticed this weekend that I only had about 250.00 to use?? There's was like 8 hundred in there?? So I'm like where's my money??? Today I get home & check my balance, there a debit pending for like 540.00??? ekkkkk I'm freaking out call the bank to see if they can see what it's for. They say their going to check it out & call me back........waiting like forever & I'm going to throw up!!! All I can think of is when I used my card at Arby's late Thursday & someone got my pin number. Oh I'm still gonna throw up!! So DH gets home & I'm trying to tell him all this crap & it comes out all in one sentence ,so he said calm down then tell me LOL So finally I get to tell him straight up. The bank calls & they can't see what it is???????Ackkkkkkkkkkkkk I'm still gonna throw up!!!!!!! Mean while I can't pay the bills I was gonna pay today:( Plus I had more money to deposit & I'm not going to do that if someone got into my account!!! Throw up at this point!!! Ewwwwwwwwwwww DH calmly comes in & asks the exact amount??? I tell him, he said that's the same amount of the paycheck I cashed on Thursday. I ask for the stub & we head to the bank. They said they will know more tomorrow. They think the teller did it backwards??? But why are they going against my account & not his business account?? Maybe cause his name is on that account too?? or cause I had money in there to cover it?? I'm so gonna fix that!! LOL Not worth the stress!!

Happy 4 of July!

Happy 4 of July!!!
Hubby & I are both sick:( He went to Mediac Wed. night & got meds. I'm hoping to not get as bad as him. I've taken vit. C & day-quill trying to nip it in the bud!

Susan's 50th birthday was yesterday. A bunch of us went downtown for a few drinks & appetizers. Was fun till our waiter got a attitude, where it came from I don't know??? We were at Elijah's on the river sitting on the deck. Beautiful sunset, saw them raise the bridge for the huge ship from Singapore! DH was sleeping when I left, called to find out if I fed the animals LOL then call me again at 9:45 to see if I was drunk & needed him to come get me. I said no I had only 2 drinks cause I didn't feel good plus being downtown & a holiday weekend. I didn't want to be stupid!! DUI's here are expensive!!! Then he said he was hungry?? So I was right by Arby's ,stopped & got him a few 99 cent roast beef sandwich's. Than as I was walking to my truck I see 2 guys coming from the parking lot. They see me & start walking faster toward me. I never jumped in my truck & locked the door so fast!!! My heart was pounding!! The one dude was standing by the door telling me to put the window down??? I just waved & backed up & outta there!! Totally freaked me out!

When I'm an old lady, I'll live with each kid, And bring so much happiness...just as they did.

When they're on the phone and just out of reach,
I'll get into things like sugar and bleach.
Oh, they'll snap their fingers and then shake their head,

When they cook dinner and call me to eat,
I'll not eat my green beans or salad or meat,
I'll gag on my okra, spill milk on the table,
And when they get angry...I'll run...if I'm able!

I'll sit close to the TV, through the channels I'll click,
I'll cross both eyes just to see if they stick.
I'll take off my socks and throw one away,
And play in the mud 'til the end of the day!

I'll thank God in prayer and then close my eyes.
My kids will look down with a smile slowly creeping,

I so wish it was a do over:(

My neighbor just came over to see if I was OK. Princess didn't make it:( Bless her little heart!! She was a little black Pomerania mix about 2 years. Loved chasing cars:( I'm sick to my stomach!

I call a do over day!!!

OMG I just saw my neighbor's dog run out in the street & get hit:(I had just got home from Walmart & heard her yelling. So I started walking down the driveway to see what was going on & than it happened So fast right before my eyes!

LOL I was feeding the puppy & cats, I got dog food on my finger Ewwwwwwwwwwww I licked my finger yuck, spit, sputter & hong kong fooey!!!!!!!!!!
